A holiday favorite of my husband, brings back memories of his mom's raisin pie that was made for Christmas family dinners.

Ingredients For debbie's raisin pie

  • 2 c
    raisins
  • 2 c
    cold water
  • 1 c
    sugar or (i use splenda)
  • 4 Tbsp
    flour
  • 2
    eggs, separated
  • 1/4 tsp
    salt
  • 4 Tbsp
    butter, melted
  • 1 Tbsp
    vinegar or lemon juice
  • 1
    9" baked pie shell

How To Make debbie's raisin pie

    In saucepan combine raisins, 1 1/2 cups water and 1/2 cup sugar and bring to a boil. Combine the remaining 1/2 c water and 1/2 cup sugar, plus flour, egg yolks and salt, add to raisin mixture. Cook until thickened, stirring constantly. Remove from heat and add butter and vinegar or lemon juice.

    Pour mixture into baked pie shell. Cover with whipped cream or meringue.
