Ingredients For cracker pie

3egg whites

1/4 tspcream of tartar

1 csugar

1 tspvanilla

16soda crackers, crushed

1 cpecans, chopped

1/2 ptwhipping cream

2 Tbsppineapple preserves

1/4 ccoconut for garnish
How To Make cracker pie

1Line a 9 inch pie plate with foil and grease with butter. Beat egg whites until foamy. Add cream of tartar and beat until stiff. Gradually blend in sugar and vanilla.

2Crush the soda crackers and add to the chopped pecans. Gently fold into egg white mixture. Pour mixture into the foil-lined pie plate. Bake for 30 minutes in a 325 degree oven. Let cool completely.

3Beat whipping cream gradually adding pineapple preserves until set. Spread on cool pie. Sprinkle top with coconut. Refrigerate.
