This is a very good and easy coconut pie.I always get good comments on this pie.This recipe called for 1 can of coconut but it's more expensive than bagged coconut so I use 1 1/3 cups of coconut to equal 1 can of coconut.My aunt gave me this recipe many years ago,it's always been a favorite of ours!

Ingredients For coconut pie

1 1/2 csugar

2 tspself rising flour
-
3eggs,beaten well

1 stickbutter or margarine melted

1/3 cbuttermilk
- 1/2-TEASPOON VANILLA EXTRACT

1 1/3 csweetened coconut

1deep dish pie crust
How To Make coconut pie

1Beat the above ingredients well,reserving the coconut

2Grease bottom of uncooked pie shell with some of the margarine or butter I usually dip my fingers in the butter and spread it around the crust.

3Sprinkle 1/2 coconut on bottom of buttered crust.

4Pour mixture over coconut

5Sprinkle remainder of coconut on top.

6Bake in preheated oven at 350* until middle won't shake about 1 hr.
