I used to make this pie for our coffee hour at church after services. This was our pastor's favorite pie and would always request that I make it. It is rich and sweet and very easy to make.

Ingredients For coconut macaroon pie

  • 1 1/2 c
    sugar
  • 2
    eggs
  • 1/2 tsp
    salt
  • 1/2 c
    butter or margarine, softened
  • 1/4 c
    flour
  • 1/2 c
    whole milk
  • 1 1/2 c
    shredded coconut
  • 1
    9" unbaked pie crust

How To Make coconut macaroon pie

  • 1
    Beat sugar, eggs and salt until mix is lemon colored. Add butter and flour. Blend. Add milk; fold in coconut. Pour into pie shell and bake for 1 hour at 325.
