Ingredients For coconut custard pie - aunts recipe

2 - 9inch, unbaked pie crust or can make 1 deep dish pie.

5eggs
-
1/4 tspsalt

12 - 14 ozshredded coconut
-
3/4 cbuttermilk
-
1/2 cmelted, butter
-
2 csugar
-
1 tspvanilla extract
-
cinnamon for the top ( optional )

1Preheat oven to 350 degree F. Have your crusts ready.

2In a large bowl, beat eggs & sugar until smooth.

3Mix in buttermilk & melted butter. Stir in coconut & vanilla.

4Divide the batter equally between both pie crusts.

5Bake for 15 minutes, then cover the crust with strips of aluminum foil to prevent the crust burning. Bake for an additional 30-35 minutes.
