  • 1 1/2 c

  • 1 1/2 c
    coconut milk (one can)

    flour
  • 1/4 c
    cornstarch
  • 1/4 tsp
    salt
  • 2 tsp
    vanilla

    pie shell, baked
  • 11/2 c
    cool whip

How To Make coconut cream pie

    LIGHTLY BAKE COCONUT ON BAKING SHEET FOR ABOUT 5 MINUTES ON 375 STIRRING OCCASIONALLY TILL GOLDEN... THEN SET ASIDE.

    IN A MEDIUM SAUCEPAN COMBINE HALF N HALF, COCONUT MILK, BEATEN EGGS, SUGAR, FLOUR, CORNSTARCH, SALT N MIX WELL. BRING TO A BOIL OVER LOW HEAT... B PATIENT N WAIT FOR BOIL... STIRRING CONSTANTLY. REMOVE PAN FROM HEAT N STIR IN 1 CUP OF TOASTED COCONUT N VANILLA.

    POUR FILLING INTO BAKED PIE SHELL N CHILL FOR ATLEAST 4 HOURS OR UNTIL FIRM. (DO NOT COVER). THEN TOP WITH COOL WHIP N SPRINKLE WITH REMAINN TOASTED COCONUT. (MY PIE WAS EATEN SO FAST THAT I DIDNT HAVE TIME TO TAKE PIX WITH TOPPING)!....ENJOY :) REVISED PICTURE WITH TOPPING....NOW TOTALLY ENJOY :)
