This recipe was given to me by my daughter. It's an old-fashioned pie that's rich and creamy. The meringue is great!

Wow, this is a delicious chocolate pie. The chocolate just melts in your mouth with every bite. The pie has a thick, rich chocolate filling. On top is the fluffiest meringue. Light with a hint of creamy texture, it indeed does not weep. It perches on top of the cake like a beautiful fluffy cloud. Definitely a chocolate lover's pie.

Ingredients For chocolate pie with no weep meringue

    8" deep dish pie crust, baked per package directions
  • CHOCOLATE FILLING
  • 3
    egg yolks
  • 1 c
    sugar
  • 4 Tbsp
    cocoa powder
  • 4 Tbsp
    all-purpose flour
  • 2 c
    milk
  • 1 pinch
    salt
  • 1 tsp
    vanilla extract
  • 1 Tbsp
    margarine
  • MERINGUE
  • 3
    egg whites, beaten till stiff
  • 1 Tbsp
    corn starch
  • 2 Tbsp
    sugar
  • 1/2 c
    water
  • 6 Tbsp
    sugar

How To Make chocolate pie with no weep meringue

  • Egg yolks and milk stirred until mixed.

    For Pie: Beat egg yolks. Add milk and stir until mixed.
  • Sugar, cocoa, flour, and salt added to saucepan.

    Sift sugar, cocoa, flour, and salt. Add to egg and milk mixture. Cook until thickened.
  • Vanilla and margarine added to thickened pudding.

    Add vanilla and margarine.
  • Pudding poured into the baked pie crust.

    Pour Into baked 8" pie crust.
  • Corn starch, sugar, and water cooking in a saucepan.

    Meringue: In a saucepan, mix 1 Tbsp corn starch, 2 Tbsp sugar, and 1/2 cup water. Cook until clear; set aside.
  • Corn starch mixture mixed with egg whites until fluffy.

    In a mixing bowl, add a pinch of salt to the 3 egg whites. Whip until peaks form. Add corn starch mixture. Beat until creamy. Gradually add 6 Tbsp of sugar. Beat until creamy and stiff.
  • Meringue piled onto the pie.

    Pile on the pie to the edges.
  • Toasting meringue in the oven.

    Bake at 325 F until brown. It will take a while to brown.
