Some pecan pies are just too sweet, some are a bit bland and some are just waxy tasting. This pie is smooth tasting and rich, a pecan pie that is just perfect! I found this recipe in an old blue ribbon winner cookbook so I hope it is a blue ribbon winner in your house, too! It is in mine. I served it for CHRISTmas Eve dinner and several people remarked how good it is! Yum!

Ingredients For catherine's pecan pie

1 Tbspflour, all purpose

3/4 csugar

3/4 clight corn syrup

1/4 chalf and half, fat free (can use whole milk)

2eggs, beaten slightly

2 Tbspbutter, melted (kerrygold is best)

1 1/2 cpecans, chopped

1unbaked pie shell
How To Make catherine's pecan pie

1Mix together flour and sugar; stir in remaining ingredients and blend thoroughly. Pour into unbaked pie crust. Bake in 350 degree oven for about 1 hour or until pie is set and firm. Top with whipped cream or cool whip.
