Ingredients For avocado orange pie

  • 1
    avocado
  • 1/2 c
    fresh orange juice
  • 1 c
    white sugar
  • 1 pkg
    gelatin, unflavored
  • 1 pinch
    salt
  • 3
    eggs, separated, room temp
  • 1/2 c
    fat free milk
  • 1 Tbsp
    grated orange peel
  • 1
    9 inch pie crust, baked - or shortbread pie crust

How To Make avocado orange pie

    Puree avocado together with orange juice.

    In double boiler mix half the sugar, gelatin and salt. eat egg yolks slightly with milk and stir in. Continue stirring over boiling water until dissolved. Remove form heat. Stir in orange peel, then avocado mixture. Chill until mix firms slightly - forms a dollop when dropped with spoon.

    Beat egg whits, gradually, adding remaining sugar, until stiff (don't allow to get dry, though). fold into avocado mixture.

    Add mixture to pie crust and chill until firm.
