Well the Pizza pan apple coconut pie worked out great -so I thought I would try one in a cake pan with a custard filling. That worked out wonderful too- again you can use other fresh fruit in this recipe. I want to try canned pineapple chunks next..Oh I think that will be the best one yet..

Ingredients For apple -coconut pie in a cake pan

  • FILLING:
  • 4 c
    crisp apples,peelings can be on or off, cube apples
  • 1 md
    lemon juiced
  • 1 1/2 c
    granulated sugar
  • 1 tsp
    ground cinnamon
  • 2 tsp
    apple pie spice
  • 1 1/2 c
    sweetened shredded coconut
  • 5 oz
    can evaporated milk, such as carnation or pet
  • 1 lg
    egg
  • 2 tsp
    vanilla extract
  • CRUST:
  • 1/2 c
    butter, melted
  • 1 1/2 c
    all purpose flour
  • 1/4 tsp
    salt
  • To make:
    using the small bowl of mixer combine all ingredients and press into bottom of 9x13-inch baking dish.set aside.

How To Make apple -coconut pie in a cake pan

    Preheat oven to 350^. Make crust;set aside. In a small bowl combine 1 cup of the sugar and the cinnamon;set aside. --- In separate bowl combine apple pieces and lemon juice, stir to coat; pour evenly over crust. Sprinkle the cinnamon sugar mixture over apples. Bake for 20 minutes.

    Meanwhile combine the coconut, remaining sugar, evaporated milk, vanilla and egg. When the pie has baked-remove from oven and spoon the coconut mixture over apples evenly. Bake for another 20 minutes or until slightly brown and bubbly.Remove to cool on wire rack. Serve cool with vanilla ice cream.
