I found this recipe a few years ago when my MOPS group compiled our favorite recipes. While I shared many of mine, this was one that a good friend added to our collection. I used to make this a lot as it is so simple! I forgot about it until this afternoon and I couldn't wait to make it again. Enjoy! Shown as coconut custard pie garnished with whipped cream and sprinkled toasted coconut. :-) Drooling yet?

Ingredients For amazingly easy custard pie

2 cmilk
-
3/4 csugar
-
1/2 cbaking mix

4 lgeggs

1/2 cbutter (softened)

1 1/2 tspvanilla
-
1 ccoconut (optional)

cinnamon and nutmeg to taste
How To Make amazingly easy custard pie

1Combine milk, sugar, baking mix, eggs, butter and vanilla in a blender for 3 minutes and pour into greased 9 inch pan. Let stand for 5 minutes.

2Sprinkle cinnamon and nutmeg on top. If using coconut, sprinkle coconut on top before spices (spices go on top).

3Bake at 350 degrees for 40 minutes.
