Ingredients For zabaione

1 cblueberries, sorted and washed

4 Tbspgranulated sugar, divided

3 lgfree-range egg yolks

3 Tbsplimoncello liqueur

1 smpinch fleur de sel

1/8 tsplemon zest, for garnish

2 lgmint leaves, for garnish
How To Make zabaione

1Mix blueberries with 1 tbsp. sugar; set aside until ready to serve.

2In a glass bowl, combine yolks and the remaining 3 tbsp. sugar; whisk well until smooth and no longer grainy.

3Add limoncello and salt; whisk until foamy, about 2 minutes.

4In a pot, bring water to a simmer. Lower the heat to medium-low and place bowl making sure the bottom doesn’t touch the water. Whisk constantly until it thickens, about 8 to 10 minutes, lifting the bowl once in awhile.

5Spoon the macerated blueberries in two dessert dishes and set aside.

6Remove from the heat and spoon the custard over the berries, topped with lemon zest and garnished with a mint leaf.
