a co-worker gave me this,and if you love sweet potatoes,this is one you will sure want to try and it is so simple.

Ingredients For sweet potatoe" enchiladas"

  • 2 md
    sweet potatoes,peeled and sliced 1/4"
  • 2 can
    refrigerated crescent rolls
  • 1 1/2 c
    sugar
  • 1 c
    butter, melted
  • 1 can
    12 ounce size mt. dew

How To Make sweet potatoe" enchiladas"

  • 1
    preheat oven to 350 unroll cresent rolls and seperate into triangles place one sweet potatoe slice on wide end of each triangle,roll up tucking edges around the potatoe,lay tucked side down in a 13X9" glass baking dish. stir together the sugar and butter in sauce pan over med. heat till sugar dissloves, pour the mixture over the rolls, pour the can of mt. dew on last. bake till brown and bubbly

    note: i tried making this in an aluminum pan, it did not cook right, glass works the best.
