Ingredients For strawberry-rhubarb cup dessert

  • 1 lb
    rhubarb, fresh, cleaned, cut into 1/2" thick slices
  • 1/2 c
    sugar
  • 1 c
    water
  • 1 - 3 oz. pkg
    strawberry, jell-o
  • whipped cream, sweetened or cool whip
  • strawberries, fresh, whole (dipped in sugar) or fanned (for garnish)

How To Make strawberry-rhubarb cup dessert

    Toss rhubarb with sugar in a large saucepan; stir in water.

    Bring to a boil on medium heat, stirring constantly; cook 2 minutes. Remove from heat. Add dry jell-o mix; stir 2 minutes until completely dissolved. Pour into dessert cups.

    Refrigerate 3 hours or until firm.

    When ready to serve, dallop of whipped cream & a strawberry either dipped in sugar or fanned out on top.
