This cheesecake tart is creamy, smooth, tangy and delicious! The whipped cream really makes this light and airy - less dense than a normal cheesecake. The cinnamon flavor from the crust is yummy and adds another depth of flavor to the tart. The strawberry lime coulis is what makes this really special. It's sweet with hints of lime. It takes this heavenly dessert to a whole other level.

  • 12 sm
    oatmeal iced cookies
  • 12 sm
    snickerdoodle cookies
  • 6 Tbsp
    butter, melted
  • 2 tsp
    cinnamon
  • 2 Tbsp
    sugar
  • CHEESECAKE TART CENTER
  • 1 3/4 c
    heavy cream, whipped
  • 1 1/2 stick
    cream cheese (12 oz.)
  • 1/2 c
    Cool Whip
  • 4 tsp
    vanilla extract
  • 3 Tbsp
    sugar
  • 1/3-3/4 c
    powdered sugar
  • COULIS
  • 10 oz
    frozen strawberries
  • 3 Tbsp
    lime juice
  • 1/2 c
    sugar
  • 1 pt
    strawberries

How To Make strawberry lime cheesecake tart

  • Oatmeal cookies crushed in a bowl with butter and sugar.

    Crush cookies in a Ziploc bag. Place in a bowl with butter, sugar, and cinnamon.
  • Crushed cookies pressed into a tart pan.

    Press cookies into a 9-inch tart pan. Place in a freezer for 15 mins.
  • Strawberries reducing in a saucepan.

    In a saucepan, add frozen strawberries, lime juice, and sugar. Cook for 10 mins. Strain and set aside to cool.
  • Whipping cream in a bowl.

    In two separate bowls, whip cream into stiff peaks adding 2 tsp vanilla and 1/3 cup powdered sugar.
  • Cream cheese and whipped cream creamed together.

    In another bowl, cream together cream cheese, Cool Whip, 2 tsp vanilla, and 3 tbsp sugar.
  • Cream cheese, whipped cream, and Cool Whip combined together in a bowl.

    Add cream cheese mixture to whipped cream. Whip for 2-3 mins. Add powdered sugar as needed for sweetness.
  • Cream mixture added to chilled cookie crust.

    Pour mixture into tart pan, set in freezer for 20-30 mins. Then fridge for another 35-40 mins or until set (1 hour - 1 1/2 hours). Serves with fresh strawberries and coulis.
