I just love shortbread. This is so easy and yummy. It's become a staple of my holiday baking. Score the top before baking. This really helps to cut into squares without breaking.

Ingredients For scotch shortbread

  • 1 lb
    butter, softened
  • 1 1/2 c
    powdered sugar
  • 1 c
    rice flour
  • 3 1/2 c
    flour, sifted three times

How To Make scotch shortbread

  • 1
    Cream butter and sugar. Add rice flour. Add flour gradually.

    Press into 13X9 pan and score top. Bake at 300 degrees until golden brown - one hour or more.
