Ingredients For rhubarb crunch

  • CRUST
  • 1 c
    flour
  • 3/4 c
    quick oatmeal
  • 1 c
    light brown sugar, packed
  • 1/2 c
    butter, melted
  • 1 tsp
    cinnamon
  • FILLING
  • 1 c
    sugar
  • 2 Tbsp
    corn startch
  • 1 c
    water
  • 1 tsp
    vanilla
  • 1-2 c
    rhubarb, diced

How To Make rhubarb crunch

  • 1
    Mix crust ingrediants until Crumbly. Then press 1/2 the crumbs into a 9 inch pie pan. Cover with thick layer of rhunbarb.

    In a sauce pan, mix filling ingredients. Cook until thick and clear. Pour over rhubarb. Top with the other 1/2 of the crust crumbs.

    Bake at 350 for 1 hour. While still hot top with vanilla ice cream and serve.
