This is a great casserole for rhubarb lovers and even for those that think they don't like rhubarb. It can be used as a side dish or even as a dessert with ice cream over it. I have also included a variation that I have often made as well.

Ingredients For rhubarb casserole

3 cchopped rhubarb

6 sliceslices of bread, cubed

1 stickmargarine, melted

1 csugar
How To Make rhubarb casserole

1Mix all ingredients and put in a 9 x 13 pan. Bake at 350 for 1/2 hour to 45 mins.

2Variation: Add 2 eggs and 1 cup of milk, 1 tsp vanilla and a dash of cinnamon, for a bread pudding type of texture to use as a dessert.
