My mom gave me this recipe, she has made these for Thanksgiving dinner many times. Personally, I prefer these to pumpkin pie.

Ingredients For pumpkin squares

  • 1 c
    all purpose flour
  • 1/2 c
    brown sugar
  • 1/2 c
    quick cooking oats
  • 1/2 c
    butter or margarine
  • 16 oz
    can pumpkin puree
  • 13 oz
    can evaporated milk
  • 2 lg
    eggs
  • 3/4 c
    sugar
  • 1/2 tsp
    ground ginger
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground cloves
  • 1 tsp
    ground cinnamon
  • 1/2 c
    brown sugar
  • 1/2 c
    chopped pecans
  • 2 Tbsp
    butter or margarine

How To Make pumpkin squares

    Combine flour, oats, 1/2 c. brown sugar, and 1/2 c. butter in mixing bowl; mix until crumbly. Press into an ungreased 9X13 pan. Bake at 350 for 15 minutes.

    Combine pumpkin, milk, eggs, sugar, salt, and spices in mixing bowl; beat well. Pour into cooled crust. Bake at 350 for 20 minutes.

    In the meantime, combine 1/2 c. brown sugar, chopped pecans, and 2 Tbsp. butter; sprinkle over pumpkin filling. Return to oven and bake 15-20 minutes more or until set. Cool.
