I love lemon, everything with lemon....lemon pie, lemon cake, Key lime pie. I don't remember where I got this recipe but have been making them for so many years...can't remember how long. My motto: If it works don't fix it! LOL Enjoy!

Ingredients For powdered sugar dusted lemon bars

  • 1 c
    all purpose flour
  • 1/4 c
    sifted powdered sugar
  • 1/2 c
    unsalted butter (one stick)
  • 2 lg
    eggs
  • 3/4 c
    grandulated sugar
  • 3 Tbsp
    lemon juice
  • 1/2 tsp
    lemon zest, grated (make sure to only use the yellow skin of the lemon, not the white)
  • 2 Tbsp
    all purpose flour
  • 1/4 tsp
    baking powder
  • powdered sugar for dusting

How To Make powdered sugar dusted lemon bars

    preheat oven at 350 degrees Have your pan available: 8x8x2

    In a medium size bowl, stir together 1 cup flour and 1/4 cup powdered sugar. using a fork, cut in butter until mixture is crumbly yet soft.

    Put into a lightly sprayed baking pan pressing down firmly. Bake at 350 degrees for 12 to 15 minutes.

    In the same mixing bowl beat eggs with your mixer then add granulated sugar, lemon zest and lemon juice. <----Beat until slightly thick and smooth. About 8 to 10 minutes.

    In a separate bowl "stir" together 2 tablespoons flour and baking powder until combined. Add to egg mixture and blend until all is moistened. Make sure to get all the yummy lemon zest off your beaters and back in the bowl!

    Pour over baked layer and place back into your oven for 20 to 25 minutes.

    Sift powdered sugar on top until well coated. Let cool completely before cutting into bars. <--- this is just out of the oven before the powdered sugar.
