Ingredients For pitter-patter

  • 2
eggs (reserve one yolk for the top)
  • 1/2 lb
    real butter, salted
  • 2 c
    all purpose flour
  • 1 c
    raspberry jam
  • 1 Tbsp
    brandy
  • 2-3 Tbsp
    sugar

How To Make pitter-patter

  • 1
Cream softened butter and sugar together. Slowly stir in 1 whole egg + 1 egg white and brandy. Mix in the flour until well combined. Divide dough into 2 parts and roll out to cover the bottom plus enough to form an edge going at least 1/3 of the way up the side of a buttered and floured pan. You may choose to use a pie pan or a square/rectangle baking pan. Fill with raspberry jam and cover with the remaining dough that is rolled out just enough to be able to press edges together in no particular fashion. Brush with beaten egg yolk and bake in a 350 degrees oven for 30-35 min. Enjoy!
