Ingredients For pineapple fridge cake

  • 4 oz
    margarine
  • 1 pkg
    digestive biscuits
  • 4 oz
    margarine
  • 6 oz
    confectioners' sugar
  • 2
    eggs
  • 1 can
    crushed pineapple
  • 4 oz
    double cream
  • PINEAPPLE FRIDGE CAKE

How To Make pineapple fridge cake

  • 1
    1st layer:- 4oz margarine
    1 pkt digestive biscuits
    crush the biscuits but leave about 4-6 for topping
    melt the margarine and mix with the crushed biscuits
    spread into a swiss roll tin and bake at 350f or 170c for 15 minutes. leave to cool

    2nd layer:- 4oz margerine
    6 oz confectionary sugar
    cream together with 2 eggs,
    and spread over 1st layer

    3rd layer:- crushed pineapple
    4oz double cream
    drain the crushed pineapple
    whip the cream and mix with the crushed pineapple
    and spread over the 2nd layer
    with the 4-6 crushed biscuits left over sprnkle over the top and then place in the fridge for at least 6 hours better overnight
