My assistant brought these in to work one day just before time for performance review__ ;-)

Ingredients For petite cheesecakes

2 pkg(8 oz) cream cheese, softened

3/4 csugar
-
2eggs
-
1 Tbsplemon juice
-
1 tspvanilla extract
-
24vanilla wafers cookies

1 clove(21 oz) cherry pie filling
How To Make petite cheesecakes

1Line muffin tins with paper cups. Place one wafer, rounded side down in each cup. Heat oven to 375.

2Beat cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill each cup 2/3 full of mixture. Bake for 15-18 minutes till set.

3Cool and then top with pie filling, 1 Tbsp on each cup and chill.
