peanut butter berry bars

Summer is a good time to stock up on berries or fruit from your own garden, a farmers' market or directly from the orchard. These bars are reminiscent of PB&J flavors. Use whatever fruit you like, but be sure to chop peaches or large berries. Adapted from the Chicago Tribune food section.

Ingredients For peanut butter berry bars

  • 1/2 c
    unsalted butter (1 stick)
  • 1 c
    peanut butter (or almond butter)
  • 1/2 c
    brown sugar, packed
  • 3/4 c
    sugar, granulated
  • 1
    egg
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    flour
  • 1 tsp
    salt
  • 1/2 tsp
    baking powder
  • 10 oz
    frozen berries, any kind or mixture

How To Make peanut butter berry bars

    Preheat oven to 350ºF. Grease a 8 or 9 inch square pan and also line with parchment paper. Let it extend over edges to make removal easier.

    Stir together the butter, peanut butter, brown sugar and 1/2 cup of white sugar until well mixed. Beat in egg and vanilla.

    Mix in flour, salt and baking powder.

    Put 2/3 of batter in pan, press to cover bottom.

    In another bowl, toss the FROZEN berries or desired fruit with remaining white sugar. Scatter over dough. Sprinkle remaining dough over fruit.

    Bake until golden brown, about 45 - 50 minutes. Fruit will be bubbling. Cool completely before you slice.
