Got this from Melody Byrd in Olympia tried it and fell in love with it. I used the chocolate and peanut butter chips and they were awesome.

Ingredients For pb & j muffins

  • 1 3/4 c
    corn flakes
  • 1 c
    milk
  • 1/2 c
    creamy peanut butter
  • 1
    egg
  • 1 1/4 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/4 c
    jam, or jelly
  • 1/2 c
    brown sugar

How To Make pb & j muffins

  • 1
    Combine Corn Flakes and Milk, let stand to soften cereal. Then add Peanut Butter, sugar, and egg, bet until smooth.

    Combine Flour, baking powder, salt and mix well. add to cereal mixture and stir until moistened. Fill 12 paper muffin cups 1/2 full , top with 1 tsp. of you favorite jam/jelly. top with remaining batter.

    Bake @ 400 degrees for 16 to 18 minutes and enjoy!!

    You may also use any flavor of Chocolate, butterscotch, White Chocolate or Peanut butter chips in place of the jam.
