my organic version of tiramisu
I use dr oetkers vanilla sugar because it gives it a very nice flavour and it's not a liquid, you don't want too much liquid in the cream or will be too soggy.

Ingredients For my organic version of tiramisu

3large farm fresh eggs

1container of mascarpone cheese

1container of organic heavy cream or farm fresh heavy cream

1/2cup of organic espresso

1/2shot glass of rum
-
1 1/2cups of organic sugar

1package of vanilla sugar

1/3cup of ghirardellis sweet baking chocolate for sprinkling
How To Make my organic version of tiramisu

1I don't have a recipe, I cook like my mom and my grandma, everything is a pinch and the measure of an eye, LOL It's 3 farm fresh eggs, separated yolks from whites, yolks beaten with vanilla and sugar until creamy (butter color) and whites beaten with just a pinch of salt (helps keep it stiff, I keep the stiff egg whites in the fridge while I am mixing the other ingredients, cream and cheese and eggs need all to be in their own bowls, not in one bowl, you combine them gently in the end),

2medium size organic or raw heavy cream whipped till fluffy and stiff with just a little bit of organic sugar and vanilla sugar, then mascarpone Italian cheese (cheaper at walmart) whipped with organic sugar and vanilla sugar, don't get too creative with flavours or it will no longer be a tiramisu... the accent flavours in a real tiramisu are the coffee and chocolate... gently combine in one bowl.

3Make a very strong coffee (espresso strong), just a little bit (about 1/3 to 1/2 cup) and add a half a shot glass of rum. Dip ladyfingers (found in italian or EU markets) in coffee/rum (just put in and flip once or they fall apart, plus the moisture from the cream will make them softer too)

4line the bottom of a nice glass pan with dipped ladyfingers, put layer of fluffy cheese mixture over ladyfingers, sprinkle with pure organic chocolate, put another layer of coffee/rum dipped lady fingers, layer of cream, and sprinkle with pure organic chocolate. Let sit in the fridge over night. (or at least 3 hours before serving)
