Ingredients
- 2 tablespoons butter
- 1 cup sugar
- 4 tablespoons flour
- 1 - lemon-grated and juiced
- 1 1/2 cups milk
- 3 - eggs, separated
- 1 pinch salt
How To Make mom-mom's lemon sponge pudding

Step 1Preheat oven to 350

Step 2Butter ramekins(6), put the ramekins in a large oven proof cake pan, fill half way with very hot water. In a large mixing bowl, cream softened butter. Add sugar, flour, salt, lemon rind and juice. Mix well.

Step 3In a separate bowl mix egg yolks and stir in milk. Slowly add egg mixture to the butter mixture.

Step 4Beat egg whites until stiff, gently fold the egg whites into the mixture.

Step 5Pour mixture into ramekins, carefully put in oven and bake for 45 mins. Cool completely and refrigerate for at least 2 hours
