mom duncan’s cream puffs
This was one of my husband’s favorite dessert that his Mom made. She is gone now and I got her recipe. I make these for my husband on special days, like today, Father’s Day.

Ingredients For mom duncan’s cream puffs
- PASTRY PUFF

1 cwater, boiling

1/4 tspsalt

4 lgeggs

1/2 cbutter, unsalted

1 call purpose flour
- CREAM FILLING

2/3 csugar
-
1/2 call purpose flour

1/2 tspsalt

2 cmilk, scalded

2 lgeggs, beaten

1 tspvanilla extract
How To Make mom duncan’s cream puffs

1FOR PASTRY: Bring water, salt, and butter to a boil. Add Flour all at once.

2Cook, stirring constantly until mixture leaves the sides of the pan. Cool.

3After mixture is cool, add eggs one at a time, beating until smooth after adding each egg.

4Drop by heaping tablespoon on to greased cookie sheet.

5Bake in preheated 450• oven for 15 minutes, then reduce temperature to 350• for additional 20 minutes.

6When completely cool stuff with cream filling.

7CREAM FILLING: Mix all ingredients except eggs and vanilla in double boiler for 10 minutes.

8Add beaten eggs, cook 2 minutes longer. Cool and add vanilla.

9I used a Pampered Chef Pastry filler and it was so easy to insert filling. If you don’t have a pastry filler, you can take a small spoon and scoop into the side of the pastry and fill.
