Ingredients For mini pecan tartlets

  • 1 pkg
    refrigerated pie crusts, like pillsbury
  • 3/4 c
    canned pumpkin
  • 1/4 c
    sugar
  • 1 tsp
    pumpkin pie spice
  • 1
    egg, lighlty beaten
  • 1/4 c
    light cream
  • 1 Tbsp
    ligh brown sugar
  • 1 Tbsp
    melted butter
  • 1/3 c
    chopped pecans
  • maple syrup for drizzling

How To Make mini pecan tartlets

    Heat oven to 350. Lightly spray mini muffin cups w/ cooking spray. Unroll dough and using a 2-1/2" round cookie cutter, cut 12 rounds from each pie crust dough.

    Gently pu each round of dough into bottoms and up sides of muffin cups. In lg bow, whisk together pumpkin, sugar and pumpkin pie spice. add beaten egg until combined.

    Slowly stir in light cream. In small bowl, stir together pecans, brown sugar and butter. Spoon 2 tsp filling into cups, top w/ 1 tsp pecan topping. Bake 35 mins. Remove from oven, cool. remove from pan onto wir rack. Drizzle w/ maple syrup.
