Recipe from pastor's wife, after tasting it at a potluck fort our Women's Bible Study about 25 years ago. It has become a family favorite. Very similar to Frog Eye Salad but easier.

Ingredients For macaroni fruit salad

  • 3/4 c
    dececco acini di pepe macaroni
  • 1 20 oz can
    crushed pineapple drained
  • 1 11 oz can
    mandarin oranges drained (2t reserved)
  • 3/4 c
    white sugar
  • 2
    eggs, beaten
  • 1/4 tsp
    salt
  • 8 oz
    cool whip

How To Make macaroni fruit salad

  • 1
    Cook and drain macaroni
  • 2
    Boil sugar, 2T reserved juice, eggs and salt. Cook and stir until thickened.

    Pour over macaroni combined with fruit.
  • 4
    Refrigerate overnight. Before serving spread Cool Whip over top.
