luc's crêpes
This is a recipe that my husband makes every weekend. We pour on real maple syrup and roll them up! This recipe could also be used for dessert crêpes or savory crêpe dishes. Makes about 20, 8" crêpes.

Ingredients For luc's crêpes

4 cmilk

3 cwhite flour

1 tspbaking powder

1/2 tspsalt

2 Tbspsugar

1 tsppure vanilla extract

4large eggs

4 Tbspbutter, melted
How To Make luc's crêpes

1Bring the milk to room temperature.

2Mix the flour, salt, baking powder and sugar together. Put this mixture in the mixing bowl.

3Slowly stir in about 1/2 of the milk, or a bit more, to get a smooth, thick mixture.

4In a separate container, lightly beat the eggs.

5Add the melted butter (not too hot), eggs and rest of the milk to the mixer.

6Add the vanilla

7Let rest a few minutes before cooking.

8Grease your pan. Pour about 1/4 of a cup of batter at a time into a hot pan, depending on the size of pan you are using. Swirl it around to thin it out a little bit. Cook until brown and flip. Brown the second side.
