low carb magic “cookie”

Several of us have recently switched to a low carb lifestyle at work and we are always coming up with new ways to satisfy the cravings. This one was a mixture of two ideas. The “cracker/crust” base is great by itself and can be used for savory dishes as well. The topping is what I call my candy bar.

Ingredients For low carb magic “cookie”

  • 1
    keto/low carb street taco size tortilla
  • 1 tsp
    butter, melted
  • 1 Tbsp
    unsweetened coconut
  • 1 Tbsp
    pecans, in pieces
  • 1/2 Tbsp
    zero peanut butter chips
  • 1/2 Tbsp
    zero chocolate chips

How To Make low carb magic “cookie”

    Place Keto Street Taco Tortilla on a paper towel in microwave.

    Microwave on high for 55 seconds. Your microwave may vary but, what you are going for is a cracker type consistency.

    Take the tortilla out of the microwave and brush with melted butter.

    Top with ingredients in this order; Unsweetened Coconut, Pecan Pieces, Zero Sugar PB and Chocolate Chips.

    Place back in microwave for 30 seconds on high to melt the chips.

    Allow to cool before enjoying. Topping ingredients can be adjusted to your liking.
