Les Orielles de Cochon (lay zaw-RE-y day kaw-SHOHN) is French for pig's ears. Why the funny name? Because as these sweet treats fry, they are twisted to resemble little ears. Drizzle them with syrup for a sweet treat. From recipe.com.

Ingredients For les orielles de cochon

2 call purpose flour

1/2 tspsalt

2eggs

1/4 cbutter, melted and cooled

2 Tbspwater

shortening or cooking oil for deep-fat frying

1 1/2 ccane syrup (or 1 cup dark corn syrup plus 1/2 cup light molasses)

3/4 cpecans, coarsely chopped
How To Make les orielles de cochon

1In a bowl stir together flour and salt. Set aside.

2In a deep bowl beat eggs with a fork or wire whisk.

3Gradually beat in the cooled butter or margarine.

4Stir in water.

5Stir into flour mixture until well combined. If necessary, use hands to work in flour. Form into a ball with hands.

6Divide dough into 24 balls.

7On a lightly floured surface roll each ball into a paper-thin round, 6 inches in diameter. Cover rounds to prevent drying.

8In a large deep saucepan or deep-fat fryer heat 2 inches of melted shortening or cooking oil to 375 degree F. Place one round of dough in the oil. As soon as it rises to the surface, press the center with a long-handled fork and twist the fork to give the dough a pigs ear shape.

9Press fork and dough against side of the pan to retain shape.

10Fry for 1/2 to 1 minute or until golden, turning once. Drain on paper towels. Repeat with remaining rounds.

11In a 2-quart saucepan bring cane syrup or syrup-molasses mixture to boiling.

12Clip a candy thermometer to pan. Cook syrup over medium-low heat to 230 degree F, stirring frequently.

13Arrange the pastries on a platter.

14Drizzle with hot syrup. Sprinkle with pecans.
