Ingredients For lemon cups

1 csugar
-
4 Tbspflour
-
1/8 tspsalt

2 Tbspmelted butter

one lemon rind, grated

5 Tbsplemon juice, fresh

1 1/2 cwhole milk
-
3egg yolks, well beaten
-
3egg whites, stiffly beaten
How To Make lemon cups

1Oven at 325 degrees
-
2Prepare a hot water bath - a 9 x 12 metal baking pan. Add enough water that would come up almost to top of GREASED custard cups (I heat this up in the oven while making recipe)

3Combine sugar, flour, salt, butter

4Mix juice and rind, and add to sugar mixture

5Combine egg yolks and milk and add to above mixture. Mix well

6Fold in egg whites, pour into greased custard cups
-
7Bake in pan of hot water (water bath) for approximtely 45 minutes
