I love jello and I love buttermilk. But, both separately can get boring. So, just yesterday I thought, "hmm... I wonder what would happen if I used buttermilk instead of cold water?" And voila! Jello Fluff was born! Using sugar free jello, each is about 50 calories. The photo is made1:1 water to buttermilk. For a taller clear layer, use more water and less buttermilk, but always keep to the total liquid volume called for by the jello package. Keep in mind, using less buttermilk = a thinner froth layer. (If using juice, don't use citrus as this breaks down the gelatin.)

Ingredients For jello fluff

  • 2 c
    boiling water or juice, more or less as desired
  • 2 box
    any flavor sugar free or regular jello or unflavored gelatin
  • 2 c
    buttermilk
  • OPTIONAL INGREDIENTS FOR SERVING
  • 1 c
    fresh berries
  • 1 c
    whipped cream

How To Make jello fluff

  • 1
    Boil water or juice and pour it into a blender to the 2 cup mark.

    Put the lid on the blender and start it on the lowest speed.

    Open the lid and pour in the jello and/or gelatin.

    Blend about half a minute until completely dissolved.
  • 5
    Pour in the cold buttermilk and blend until the froth starts to hit the lid - just about half a minute or so.

    Immediately pour into tall wine or champagne glasses, cover with plastic wrap to discourage evaporation, then refrigerate 4 hours.

    Serve with berries and whipped cream if desired.
