Bananas and chocolate, my favorites. So why not enjoy them both in a scone? These scones come out light and fluffy.

Ingredients For gluten free banana chocolate chip scones

  • 1/2 c
    white rice flour
  • 1/2 c
    potato starch (not potato flour)
  • 1/2 c
    cornstarch
  • 1/4 c
    corn flour
  • 1/4 c
    tapioca flour
  • 2 tsp
    xantham gum or guar gum
  • 1/4 c
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 4 Tbsp
    solid shortening. such as earth balance natural shortening
  • 2
    eggs, large beaten
  • 3/4 c
    buttermilk or yogurt
  • 1
    banana
  • 1/2 c
    chocolate chips

How To Make gluten free banana chocolate chip scones

    Combine flours, starches and xantham or guar gum, baking powder, and baking soda. Preheat oven to 400 and Line large baking sheet with parchment.

    Cut shortening into flour mix either by using pastry blender or 2 knives until it resembles small peas. Mash banana. Add sugar and mashed banana to flour mix.

    Beat 2 eggs with either buttermilk or yogurt. And add to dry ingredients. Mix in chocolate chips. Drop batter onto baking sheet using ice cream scoop spaced 2 inches apart.

    Bake 10-12 minutes until tops are lightly browned. You can brush melted butter to tops before baking for extra flavor. For added sweetness add 1/2 teaspoon vanilla.
