Stephanie says a patient,Gina gave her this recipe over 30 years ago and they became good friends.Even after Gina moved back to Italy,they would write & exchange recipes. One day,her son called to tell Stephanie his Mother passed away and to Thank her for their friendship. Stephanie says she doubles the glaze and glazes all the drops because she prefers glazed doughnuts also because the doughnuts aren't very sweet, the glaze sweetens them a bit. Gina called them doughnut drops.

Ingredients For gina's doughnut drops

10 oz whole milk ricotta

2 eggs

1 1/2 c all purpose flour

1 t. baking soda

1/4 c granulated sugar

1 tablespoon vanilla extract

1/4 t. lemon rind

oil, for frying
- GLAZE
-
1 cup confectioners sugar

3 tablespoons milk
-
2 teaspoon vanilla extract
How To Make gina's doughnut drops

1Preheat about 6 c oil in a large pan ,heat oil to 325 degrees over medium to medium-high heat. Set a wire rack and place a brown paper bag underneath it. In a mixing bowl, whisk ricotta, vanilla, sugar eggs and lemon rind until well combined. Combine flour, baking soda and salt. Mix well until well combined. Scoop out some dough using a small( 1-inch) cookie scoop.Drop into heated oil about 5-6 drops,fry drops in batches for 5-7 minutes, until deep golden brown. Take out the cooked drops and place on wire rack. After draining and cooling a few minutes, dust half of them with powder sugar. Dip the remaining drops in glaze to cover.

2For the glaze, combine all ingredients until combined.Add more sugar if glaze is too thin or thin with milk.
