diana's dutch oven baby pancake

My Mom makes this all the time for my Dad and he loves it. I've had it at restaurants, but once again, my Mother improved it and made it great. You can serve it with squeezed fresh lemon juice and powdered sugar or with lingonberries and butter...yum!

  • 1 stick
    butter, unsalted
  • 1/2 c
    flour
  • 1/2 c
    milk
  • 2
    eggs
  • fresh squeezed lemon juice
  • powdered sugar

How To Make diana's dutch oven baby pancake

    Turn on oven to 475 degree's.

    In heavy frying pan or casserole place butter and put into hot oven to melt. ( I prefer a frying pan with small handles that will fit into an oven)

    Mix egg's , milk, and flour together and pour into fryjing pan and bake for 12 minutes.

    Remove from oven. With a spatula place on a plate. If there is alittle butter left in the pan drizzle the top of the pancake. Sprinkle with a little lemon juice or jam and sprinkle with powdered sugar all over it. As an alternate to jam, use lingonberries with the butter and powdered sugar.
