Ingredients For dewberry dumplings
- FILLING:

2 1/2 cdewberries (or blackberries)

2-4 Tbsphoney

2 Tbsptapioca flour

1/2 tspblack pepper

zest of 1/2 lemon
- DUMPLING:

1/4 ccoconut flour
-
3/4 calmond flour
-
3 Tbspcoconut oil
-
1 tspbaking powder
-
1/2 tspcinnamon

1/4 tspsea salt

2eggs
-
2 Tbsphoney

1 tspvanilla

zest of 1/2 lemon
How To Make dewberry dumplings

1For dumplings: sift flours, baking powder and salt. Cut in cold coconut oil with fork until crumbly. Place in freezer for 10 minutes.

2Preheat oven 400.

3For filling: In a medium saucepan add berries, honey, pepper and zest. Heat over medium and bring to simmer. Whisk in tapioca flour and simmer 10 minutes.

4Pour hot berries into casserole dish and place in oven.

5In medium bowl beat eggs, honey, lemon zest, cinnamon and vanilla. Add chilled flour mixture to eggs and mix until dough comes together.

6Carefully remove dish from oven and drop 8 dumplings onto bubbling berries. Return to oven and bake 15-20 minutes, until dumplings are golden, set and cooked through.

7Remove dish from oven and allow to cool completely and serve at room temperature.
