dessert essentials: sweet, sweet custard

This is a modification of a recipe that is very popular in China. It is served both sweet and savory (the savory version uses soy sauce). This is my adaptation of the sweet version. I will be serving this to my country club ladies on Sunday. So, you ready… Let’s get into the kitchen.

Ingredients For dessert essentials: sweet, sweet custard

  • PLAN/PURCHASE
  • 4 lg
    egg yolks (freeze and save the whites for another recipe)
  • 1 Tbsp
    coconut sugar, plus more for crusting
  • 1/4 c
    heavy or whipping cream
  • 2 tsp
    whole milk
  • 1 tsp
    vanilla extract

    You will need a bamboo steamer to make this recipe.

    Gather your ingredients (mise en place).
  • 4
    Add the yolks, sugar, cream, milk, and vanilla extract to a bowl.

    Gently whisk together. The goal here is not to create any foam, and a minimum of bubbles.

    Divide the egg/cream mixture into two small custard bowls.

    Fill the pot you will be using with the steamer halfway up with water and bring it up to a simmer

    Add the bottom portion of the steamer over the pot, then add the custards.

    Cover with the lid, and steam until the custard is nicely set, 12-14 minutes.

    Allow to come to room temperature, then cover and place in the refrigerator for 2 hours, or overnight.

    Sprinkle with coconut sugar.

    Caramelize using a kitchen torch or place under a hot oven broiler for 30 – 60 seconds.
