dessert essentials: sweet, sweet custard
This is a modification of a recipe that is very popular in China. It is served both sweet and savory (the savory version uses soy sauce). This is my adaptation of the sweet version. I will be serving this to my country club ladies on Sunday. So, you ready… Let’s get into the kitchen.

4 lgegg yolks (freeze and save the whites for another recipe)

1 Tbspcoconut sugar, plus more for crusting

1/4 cheavy or whipping cream

2 tspwhole milk

1 tspvanilla extract
How To Make dessert essentials: sweet, sweet custard

1PREP/PREPARE

2You will need a bamboo steamer to make this recipe.

3Gather your ingredients (mise en place).

4Add the yolks, sugar, cream, milk, and vanilla extract to a bowl.

5Gently whisk together. The goal here is not to create any foam, and a minimum of bubbles.

6Divide the egg/cream mixture into two small custard bowls.

7Fill the pot you will be using with the steamer halfway up with water and bring it up to a simmer

8Add the bottom portion of the steamer over the pot, then add the custards.

9Cover with the lid, and steam until the custard is nicely set, 12-14 minutes.

10Allow to come to room temperature, then cover and place in the refrigerator for 2 hours, or overnight.

11Sprinkle with coconut sugar.

12Caramelize using a kitchen torch or place under a hot oven broiler for 30 – 60 seconds.

14Serve by itself with coffee or tea, or as a dessert after a wonderful meal. Enjoy.
