Ingredients For crunchy pecan pie bites

  • 3 c
    chopped pecans
  • 3/4 c
    sugar
  • 3/4 c
    dark corn syrup
  • 3 lg
    eggs, slightly beaten
  • 2 Tbsp
    butter, melted
  • 1 tsp
    vanilla extract
  • 1/8 tsp
    salt
  • 5 pkg
    (2.1 oz. each) frozen mini-phyllo pastry shells

How To Make crunchy pecan pie bites

  • 1
    Preheat oven to 350. Bake pecans in a single layer in a shallow pan for 8-10 minutes or until toasted and fragrant.

    Stir together sugar and corn syrup in a medium bowl. Stir in pecans, eggs, and next three ingredients.

    Spoon about 1 heaping teaspoonful of the pecan mixture into each pastry shell and place on 2 large baking sheets.

    Bake at 350 for 20-22 minutes or till set. Remove to wire racks and let cool completely--about 30 minutes. Store in an airtight container for up to three days.
