Ingredients For cranberry-lemon squares

  • 2 c
    all-purpose flour
  • 1/2 c
    sugar
  • 1/4 tsp
    salt
  • 3/4 c
    butter softened, cubed
  • FILLING
  • 2 Tbsp
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 3
    eggs
  • 13/4
    sugar
  • 1/3 cup
    lemon juice
  • 2 cups
    fresh or frozen cranberries, quartered
  • 2 cups
    shredded or flaked coconut

How To Make cranberry-lemon squares

    in large bowl, whisk flour, sugar and salt. Sprinkle with butter cut in with a pastry blender until crumbly then press into a greased 9 by 13 inch pan to level. Bake at 350 degrees til golden brown about 20 min.

    Filling-In small bowl whisk flour, baking powder,and salt, set aside. in separate large bowl, whisk together eggs, sugar and lemon juice whisk in flour mixture. Stir in cranberries and coconut. Scrape onto base.

    Reduce heat to 325 degrees. bake til golden and filling is firm about 45 to 55 mins. Let cool cut into squares and Enjoy!!
