I had this dessert recipe for quite awhile . I used to make it when I lived in New Mexico .It has a very smooth ,but distinctive rich coffee taste,,The whipped topping mixture is very tasty and could be used on many different desserts,pie or cakes or other puddings . The lemon jello does not have a heavy flavor in this dessert. Try it you will love it if you like coffee!

Ingredients For coffee parfait

1 cstrong coffee
-
3 ozpkg. lemon jello
-
1/3 cgranulated sugar
-
1/2 ccold water
-
1/4 crum liquor*
-
2 cthawed whipped topping
-
2 Tbspbrown sugar,packed
-
1 Tbsprum liquor**
-
*or increase cold water to 3/4 cup and add 1 teaspoon rum extract
-
**or use 1/2 teaspoon rum extract
How To Make coffee parfait

1Place coffee in a large glass measuring cup and microwave for 1 minute or until it boils. Remove from microwave and add the jello, and granulated sugar and stir until dissolved. Add cold water and 1/4 cup of rum or alternate ingredients*.

2Pour mixture into an 8-inch square dish. Picture was taken while in the fridge..you can see reflection of food in jello..LOL

3Chill until firm- about 4 hours. Cut into cubes or scoop with a small spoon.

4Add brown sugar and rum to the thawed whipped topping or alternative**

5Layer topping mix and coffee cubes in sherbet glasses . Beginning with topping and ending with topping.enjoy!
