This is quite easy and can be made ahead of time so there is more time to enjoy guests. The sherbet can be substituted for other flavors and ice cream - the possibilities are endless.

Ingredients For coconut sherbet bars

2 cbaked coconut macaroons, broken in small pieces

1 cchopped pecans

1 ptheavy cream, whipped

2 Tbspsugar

1 ptraspberry sherbet, softened

1 ptlime sherbet, softened
How To Make coconut sherbet bars

1Fold pecans, sugar, and macaroons into the whipped cream.

2Spread 1/2 of mixture in a 9"x9" pan. Freeze.

3Spread softened raspberry sherbet over the top of frozen macaroon mixture. Freeze

4Spread softened lime sherbet over the top of the frozen raspberry sherbet. Freeze.

5Spread the remaining 1/2 of macaroon mixture over the lime sherbet. Freeze.

6Serve in squares or bars. Garnish as desired. I use raspberries and a little whipped cream. I use shaved chocolate and a little whipped cream if I use chocolate ice cream.........
