I found this recipe in my Better Homes & Gardens Dessert Cookbook that a friend gave me as a gift in Jan 1974! I make them whenever I don't want to make a whole cheesecake. Always gets rave reviews! Sorry that I don't have a picture. I will post one the next time I make them.

Ingredients For cheesecake diamonds

  • 5 Tbsp
    butter
  • 1/3 c
    packed brown sugar
  • 1 c
    all-purpose flour
  • 1/4 c
    chopped walnuts
  • 1/2 c
    granulated sugar
  • 1-8oz. pkg
    cream cheese
  • 1
    egg
  • 2 Tbsp
    milk
  • 1 Tbsp
    lemon juice
  • 1/2 Tbsp
    vanilla

How To Make cheesecake diamonds

  • 1
    Pre-heat oven to 350 degrees. Cream butter and brown sugar; add flour and nuts and mix well. Set aside one cup mixture for topping. Press the remainder in the bottom of a 8x8x2" baking pan. Bake for 12-15 minutes.

    Blend sugar and cream cheese until smooth. Add egg, milk,lemon juice & vanilla. Beat well. Spread over the top of the baked crust; sprinkle with the reserved topping.

    Return to oven. Bake 25 minutes more. Cool, then chill. Cut in diamonds.
