This scrumptious and moist Carrot Bread combines fresh grated carrots, shredded apple, chopped pecans, cinnamon, ginger and nutmeg into the best carrot loaf you will ever have. It is one of my favorite quick bread recipes and it is so easy to make. If you are a carrot cake lover this is a must try recipe. I am kind of a sucker for a good homemade quick bread. They are so easy to get in the oven and they taste so much better than store bought loaves. This bread, Lemon Blueberry Bread, Banana Nut Bread, and Pumpkin Bread with Cinnamon Glaze are just a few of my favorites.

1 3/4 cflour

1 tspbaking soda

1/2 tspbaking powder

1/2 tspsalt

1 1/2 tspground cinnamon

3eggs

3/4 cvegetable oil

1 mdapple peeled and grated

2 cgrated carrots

1 clight brown sugar packed

1 tspvanilla extract

3/4 cchopped pecans
How To Make carrot bread

1Preheat oven to 350 degrees. Grease a 9×5 inch loaf pan.

2Whisk together the flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, and ground nutmeg in a medium bowl. In a large bowl stir together the eggs, vegetable oil, grated apple, grated carrots, brown sugar, vanilla extract, and chopped pecans.

3Stir the flour mixture into the carrot mixture just until combined. Pour into prepared pan.

4Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Do not overbake.

5Cool the bread in the pan on a wire rack for 5-7 minutes before carefully inverting it on to the wire rack and gently rolling it over. Cool 2-3 hours before slicing.
