Who doesn't like donuts. These little gems are so good, they will make your mouth water with their plum, apricot or cherry jam filling. They are so authentic that they'll make you feel like your are in Western Europe. I hope you will enjoy this awesome treat.

Ingredients For jam filled carnival donuts

1 cup flour, + 2 tbsp, all purpose

1/8 cup + 2 tsp tsp milk

1/2 tbsp yeast

1 egg, whole

1 1/2 egg yolks
-
pinch of salt
-
1/4 cup icing sugar
-
2 tbsp vanilla sugar
-
1/2 tsp orange rind, grated finely
-
1 tsp pure vanilla extract

1/3 cup butter, melted
-
plum, apricot or sour cherry jam, for filling

peanut oil
-
plain icing sugar, garnish
-
or icing sugar and ground cinnamon, garnish
How To Make jam filled carnival donuts

1Put 2 tablespoons of milk in a pot and warm gently, do not boil, you only want it to be warm. Then add the yeast and gently stir to dissolve it. Stir in a little flour (1/4 - 1/2 cup) to create a thick pasted dough ball. Put the dough ball into a bowl and sprinkle 1 tbsp of flour, over the dough ball and cover it with a clean tea towel and leave to rise in a warm place, (15 - 20 min). The dough will begin to show small cracks when ready.

2Add the rest of the milk to your mixing bowl with the egg, egg yolks, salt, icing sugar, vanilla sugar, grated orange rind and vanilla extract and stir. Now add the melted butter and mix well. Using a blender with a kneading hook, blend the milk mixture, the remaining flour and the yeast dough until smooth. Cover with a clean towel and leave to rise. (1 hour)

3Now, knead the dough on a floured surface and shape it into 8 round balls. Dust the balls with a little flour and press down on them lightly with your baking tray. Place the balls on a baking tray and leave to rise in a warm place (20 - 30 minutes).

4Heat oil to 375 °F and fry the donuts a few at a time until golden brown on both sides. (approximately 2 - 3 minutes) watch that they don't burn. Remove and place on a rack to drain. Fill a pastry bag with the jam of your choice and squeeze into the doughnuts to add a little filling. When done, dust the donuts with a little icing sugar or if like my husband you prefer cinnamon icing sugar, add a little cinnamon to your icing sugar before you dust the donuts. They are great both way.
