Sometimes out of mistakes, come great things...this is one of them. I say this is a loaf, but it's more of a square really. I started out making lemon squares, and made a few mistakes. Turns out, the result is one that my kids love!

Ingredients For breakfast lemon loaf

1 cflour

1/2 cbutter
-
1/4 cpowdered sugar

2 Tbsplemon juice, or, 1 tbs water, 1 tbs lemon flavoring
How To Make breakfast lemon loaf

1Preheat oven at 350 degrees F. Mix flour, butter, powdered sugar, and lemon juice with an electric mixer until it resembles a creamy, almost liquid batter.

2Pour the batter into a 8 x 6, 2 inch deep, glass baking dish. Bake for 25-30 minutes.

3Let cool completely, turn out onto a cutting board or wax paper, and cut into squares. This makes a great breakfast kind of cake. It's a bit dense, but has a lovely, light lemon flavor to it.
