I have so many blueberries each year and was looking for something different. I ran across this recipe in a magazine and decided to give it a try. I used to make them and take them to the sweetest little elderly lady from our church and she loved them. She is no longer with us but I will share this recipe and dedicate them to Ms. Elvie.

Ingredients For blueberry/orange muffins

1 cquick cooking rolled oats

1 corange juice

1 tspgrated orange zest

1 cvegetable oil

1 tspsalt

3 to 4 cblueberries

3eggs, beaten

3 call-purpose flour

1 csugar

4 tspbaking powder

1/2 tspbaking soda
How To Make blueberry/orange muffins

1this is for the topping for the muffins: 1/2 cup finely chopped nuts, 3 Tablespoons sugar, and 1/4 teaspoon cinnamon

2Mix oats,orange juice, and zest; blend oil,and eggs and set aside. Stir together flour,sugar,baking powder,salt,and baking soda. Add oat mixture;mix lightly. Fold in blueberries. Spoon batter into paper lined muffin tins, filling 2/3 full. Combine topping ingredients;sprinkle over batter. Bake at 400 degrees for about 15 to 18 minutes or until lightly browned.
