This cheesecake is absolutely decadent! The addition of the cherry Duncan Hines Frosting Creation as a topper, makes it a real winner!

Ingredients

  • 1 can duncan hines frosting creations starter
  • 1 package duncan hines flavor packet cherry vanilla
  • 1 can dark pitted cherries in juice
  • 12 ounces softened cream cheese
  • 1 cup sugar
  • 3 - eggs
  • 1 teaspoon lemon juice
  • 1 teaspoon cherry juice from canned fruit
  • 1/2 cup sour cream
  • 24 - vanilla wafers

How To Make black cherry mini cheesecakes

  • Step 1
    Pour pack of Duncan Hines® Frosting Creations™ Cherry Vanilla Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended
  • Step 2
    Open and drain the can of cherries (need 1 tsp for batter)
  • Step 3
    Mix the softened cream cheese with sugar until blended.
  • Step 4
    Add the lemon juice and cherry juice
  • Step 5
    Mix until incorporated. Next add the eggs one at a time.
  • Step 6
    Scrape the side of the bowl and blend the eggs totally in.
  • Step 7
    Stir in the sour cream.
  • Step 8
    Line 2 cupcake pans with liners. Place one vanilla wafer in bottom of each paper. Using an ice cream scoop, fill each cupcake 3/4 full with batter.
  • Step 9
    Place 2 cherries on top of the batter of each cupcake. These will bake into the cake. Preheat oven to 350 degrees. Bake the cakes 20-25 minutes.
  • Step 10
    Allow cakes to cool completely. Place in refrigerator overnight if possible. When ready to serve, pipe the cherry frosting on each cake and eat!
